Thursday 22nd September 2016, Aberdeen, Scotland. A former oil worker who became a savvy street-food entrepreneur after losing her job in the industry hopes to hit the road soon with help from a cheesy crowdfunder.
Like thousands of others affected by the downturn in the North Sea industry, Mechelle (CORR) Clark was made redundant last year.
It was the second time in two years that she had been made unemployed due to the huge drop in the price of Brent crude.
But instead of lining up at the job centre with many of her ex-colleagues she followed her dream of bringing the humble grilled cheese sandwich back to the masses.
Earlier this year she opened Aberdeen's first ever grilled cheese takeaway joint - Melt - thanks to a fruitful crowdfunding campaign.
